

Posing on the day they inaugurated their "traditional kitchen" are the members of "Comité de Mujeres de Palacios" the Women's Committee of Palacios." With so many imports and fast food readily available, many Salvadorans welcome their own foods — tortillas, yucca root, papaya — prepared in the traditional manner.
This kitchen is mobile so the women can take it to weekend fairs, community and school events and other celebrations. Currently the equipment is kept at Angela's (top picture, middle figure, white blouse) until sturdy, permanent storage is obtained.
The Women's Committee has been raising chickens for some time. The free range taste is preferred by Salvadorans especially those in the countryside. This mobile kitchen will also afford a way for the women to market that product as well.
